A finished Highland steer is about 24 -29 months old. Half a steer will weigh approximately 550 - 625 lbs. on the hoof(live weight). Hanging weight will be approximately 325 – 625 lbs.
We charge $7.00 per lb. on hanging weight. Your Highland beef will be custom cut and wrapped based on your wishes @ $1.50 per lb. (paid direct to the butcher).
$500 deposit.

Your packaged weight is the net weight of the meat you will receive that is packaged and ready for your freezer. It will typically be 60% of the hanging weight. The reduced weight is attributed to the cutting and trimming of fat, connective tissue, bone, etc., as well as moisture lost during hanging. This weight varies depending upon the cuts of meat included and any additional package options, e.g. bones, fat etc.
Freezer Space
The rule of thumb is one cubic foot of freezer space for every 35 – 40 pounds of packaged meat. A half beef needs approximately a 6 cubic feet of freezer space.
